I don’t follow the Paleo diet per se but I feel better when I don’t have a Bed of Carbs beneath every meal. Thus I am lately obsessed with julienned zucchini as a rice or pasta substitute. I don’t bother with all the salting and water removing in this recipe, I just attack a zucchini (courgette) with my trusty julienne peeler and eat it raw or zap it quickly in the microwave.
